Southern – Style Catfish Chowder
CATFISH STOCK (MAKES ABOUT 5 CUPS)
2 YELLOW ONIONS, FINELY CHOPPED
5 MEDIUM POTATOES, DICED
2 TEASPOONS SALT
1/4 TEASPOONS GROUND BLACK PEPPER
1/4 TEASPOON CAYENNE
1 TABLESPOON LEMON JUICE
1 CUP CREAM
2 POUNDS CUBED CATFISH FILETS
1 14.5 OUNCE CAN DICED TOMATOES WITH CHILIS
IN A SAUCE PAN MIX TOGETHER CATFISH STOCK AND SALT.
BRING TO BOIL. REDUCE HEAT AND SIMMER 10 MINUTES. ADD ONIONS, POTATOES, TOMATOES, AND PEPPER TO STOCK. BRING TO BOIL, AND SIMMER UNTIL POTATOES ARE TENDER . ABOUT 15 MINUTES OR UNTIL FISH FLAKES.
ADD LEMON JUICE AND PARSLEY.
SERVE IN A BREAD BOULES OR WITH CRUSTY BREAD.
