Cod Fritters
3/4 pound salt-dried cod
1 1/4 cups all purpose flour
1 large egg
olive oil for frying

Begin with soakingĀ the cod the day before you plan to use it.Drain excess water, remove bones, and skin and cut into fillets.
Mix 1 eggs,salt, and as much flour as needed to make a thick batter. dip the cod fillets into the batter.Ā Heat enough oil in pan (about 1 inch) until hot.Ā Dip the fillets in the batter, then fry them until golden brown.Ā Drain excess oil on paper towel or brown bag and serve hot.
