Pecan Crusted Haddock

Ingredients
  • 6 tbsp. melted butter, divided
  • 4 (4-oz.) Haddock Fillets
  • 6 tbsp, fresh lime juice, divided
  • 1/2 tsp freshly ground pepper
  • 1/2 tsp. kosher salt
  • 3/4 cup of chopped toasted pecans
Instructions
  1. In a sauce pan over low heat add together 4 tablespoons the butter and 4 tablespoons of the lime juice. Keep warm on top of stove.
  2. Sprinkle Haddock Fillets with salt and pepper and drizzle with remaining 2 tablespoons of butter and lime juice.
  3. Coat a large non stick skillet with cooking spray: heat skillet over medium -high heat. Add fillets; saute’ for five minutes per side or until fish flakes easily with a fork.
  4. Top fillets evenly with pecans. Serve with the warm lime-butter sauce.
  5. Make it a meal: Serve along with a bowl of New England Clam Chowder, or Fish Chowder. Enjoy!
