Pecan Crusted Haddock
Ingredients
- 6 tbsp. melted butter, divided
- 4 (4-oz.) Haddock Fillets
- 6 tbsp, fresh lime juice, divided
- 1/2 tsp freshly ground pepper
- 1/2 tsp. kosher salt
- 3/4 cup of chopped toasted pecans
Instructions
- In a sauce pan over low heat add together 4 tablespoons the butter and 4 tablespoons of the lime juice. Keep warm on top of stove.
- Sprinkle Haddock Fillets with salt and pepper and drizzle with remaining 2 tablespoons of butter and lime juice.
- Coat a large non stick skillet with cooking spray: heat skillet over medium -high heat. Add fillets; saute’ for five minutes per side or until fish flakes easily with a fork.
- Top fillets evenly with pecans. Serve with the warm lime-butter sauce.
- Make it a meal: Serve along with a bowl of New England Clam Chowder, or Fish Chowder. Enjoy!
